- saute one medium onion in olive oil;
- add cummin and chili powder, stir;
- add one can of diced tomatoes, tomato sauce, kidney beans, and black beans;
- add one jar of salsa; and
- add handful of fresh spinach.
- simmer for 30 minutes.
- serve with shredded cheese on top.
Freezes easily. Tastes great with grilled cheese sandwiches.
