- saute one small onion and garlic in olive oil;
- add diced green pepper;
- add leftover corn (cut off the cob) and potatoes (diced);
- drop in 2 or 3 tablespoons salsa;
- add 3 cups vegetable broth;
- simmer for 20 minutes;
- add 2-3 tablespoons whole milk (that is what I had on hand, cream or half and half are other options).
- Turn off and let cool.
